Decadent and Delicious Recipes Perfect for People with Diabetes from Fitness Elements Express!


This issue’s terrific recipe is from: THE BIG BOOK OF DIABETIC DESSERTS - Decadent and Delicious Recipes Perfect for People with Diabetes

CHOCOLATE-DRIZZLED PEANUT BUTTER CAKE

Makes 9 servings
Serving Size 1 (2 1/2 inch) square
For a lunch box, an after school treat, a bake sale, or a coffee break, this cake is a pleasing sweet for peanut butter lovers of all ages.


1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/4 cup natural peanut butter
3 tablespoons canola oil
1/3 cup granular no-calorie sweetener
1/3 cup light brown sugar
1 large egg 3/4 cup low-fat buttermilk 1 teaspoon vanilla extract 1/2 ounce semisweet chocolate baking bar, chopped

Preheat the oven to 350ºF. Coat an 8 x 8-inch baking pan with cooking spray and set aside.
Combine the flour, baking powder, baking soda, and salt in a medium bowl and whisk to mix well. Set aside.
Combine the peanut butter and oil in a medium bowl and beat at medium speed until smooth. Beat in the no calorie sweetener and brown sugar. Beat in the egg. Add the flour mixture and buttermilk alternately to the peanut butter mixture, beginning and ending with the flour mixture, beating well after each addition. Beat in the vanilla.
Place the chocolate in a small resealable zip-top bag and seal. Place the bag in a saucepan of hot water. Let stand 5 minutes or until the chocolate melts. Snip a tiny corner from bag and drizzle chocolate over the cake. The cake can be covered in an airtight container and stored at room temperature up to 3 days.

Ingredients


2 tablespoons olive oil
2 tablespoons sesame oil
1 teaspoon minced fresh ginger root
1 bunch asparagus stalks, ends cut
1 tablespoon soy sauce
1/2 cup chopped cashews


Directions


Heat olive oil and sesame oil in a wok over low to medium heat. Add ginger, and stir-fry until slightly brown. Add asparagus, and stir-fry for a few minutes before adding soy sauce and cashews. Cook until asparagus is tender but still crisp and bright green, stirring frequently.

This will be Part 1 to a 3 part series of " Why You Should Use My Fat-Loss For Idiots Guide To Achieve Maximum Results!"


You are overweight for one of three reasons because one you're eating the wrong foods, two you're eating the wrong types of calories per meal, or three you're eating the wrong meals in the wrong meal frequency each day.

Think closely about what I'm about to tell you since it's going to change the way you think about dieting once and for all. At least that is my hopes for you in the long hall.


Food Is more powerful than you will ever know and it is more powerful than any prescription weight-loss pills, because the food that you eat can either work for you or agaist you. Let me repeat that food can either make you THIN or make you FAT. You don't get fat because of lack of exercising, thats a myth. You get fat because you don't eat the right foods at the right intervals each day.


Also, the pattern that you choose to eat your meals each day is more powerful than any presciption weight loss pills. This is true because Your body is like an engine and it only needs certain foods at certain intervals each day, and if you don't eat the right times your body won't utilize that fuel to burn those calories- and you will wind up storing those calories as fat tissue.


( Clue: You need to eat more than three meals per day to lose weight, but I'll talk to you more on the details later).


You have gotten over weight by eating the wrong foods at the wrong times in the wrong frequency. And guess what you can get SLIM by eating the RIGHT foods at the right times, in the right amounts, and right frequency each day.


I'ts not really any more complicated than that , and the way to start losing weight has nothing to do with starving yourself or jogging 2 hours a day.


The reason You cannot lose weight by starving your body ( using a low calorie diet) is because your metabolism will detect any major drop in calories and it will then adjust itself by burning fewer and fewer calories each day.


Let this be your first part of this 3 part series " Why You Should Use My Fat Loss For Idiots Guide To Maximize Your Results!" Let this sink in your mind and be a lesson to you of what not to do. Now, Stop Dieting and start thinking more about Intelligible Eating and Exercise. Thats another series altogether that I will be writing about so stay tuned for Part 2 and by for now.

Fabulous Fried Cabbage Recipe for You!


Ingredients

  • 2 teaspoons butter
  • 1 (15 ounce) can chicken broth
  • 1 head cabbage, cored and coarsely chopped
  • 1 pinch salt and pepper to taste

Directions

  1. Bring the butter and chicken broth to a boil in a large skillet. Reduce heat to low and add the cabbage. Cover and cook over low heat to steam the cabbage for about 45 minutes, stirring frequently, or until cabbage is tender and sweet. Season with salt and pepper and serve.

Fruit of the Month! Luscious Lime from Fitness Elements!




Lime Marinated Onion Salad

A delicious and exciting salad to serve with Southwestern foods.

This is one of our own Fruits & Veggies—More Matters® recipes. It meets the Centers for Disease Control and Prevention’s strict nutrition guidelines as a healthy recipe.

Category: Salads

Think Variety; Think Color: White Green

Preparation time: 30 minutes or less

Serves: 8

Cups of Fruits and Vegetables per Serving: ½

Ingredients:

  • 1 ½ lbs. large onions
  • 2 Tbsp. grated lime peel
  • 8-9 limes, to yield ¾ cup lime juice
  • 1 clove garlic, peeled and minced
  • 1 Tbsp. olive oil
  • ¼ tsp. black pepper
  • ¼ cup packed, chopped cilantro leaves
  • salt (optional)

Peel onions, cut in half and slice thin. Place in large non-metal bowl. Grate peel from limes and juice. Mix peel, juice, garlic, oil, and pepper and add to onion slices. Mix well, cover and place in refrigerator for a minimum of 30 minutes **. When ready to serve, toss again, adding chopped cilantro and salt, if desired. Serve chilled.

Tuna Pasta Salad w/ Avocado

A cornucopia of flavors changes a regular salad into more than a meal.

This is one of our own Fruits & Veggies—More Matters® recipes. It meets the Centers for Disease Control and Prevention’s strict nutrition guidelines as a healthy recipe.

Category: Main Dishes

Think Variety; Think Color: Red White Green

Preparation time: 30-60 minutes

Serves: 4

Cups of Fruits and Vegetables per Serving: ½

Ingredients:

2 cups pasta shells
¼ cup bottled fat-free Italian dressing
¼ cup fresh basil, chopped
2 cloves garlic, minced
¼ teaspoons red pepper flakes, crushed
1 6-oz. can water-packed tuna, drained and flaked
¾ cup diced tomatoes
½ ripe avocado, diced
¼ cup red onion, thinly sliced
2 tablespoons black olives, chopped
4 green leaf lettuce leaves

In a large saucepan, cook the pasta according to the package directions. Drain, then rinse briefly under cold water. Drain. In a small bowl, combine the Italian dressing, basil, garlic, and crushed red pepper. In a large bowl, combine the pasta, tuna, tomato, avocado, red onion, and olives. Add the dressing and toss until evenly coated. Line plates with the lettuce leaves and spoon the salad on top.

Each serving provides: An excellent source of vitamin A, folate, and a good source of vitamin C, magnesium, potassium and fiber.

Having trouble with Creative Veggie ideas? Superb Spaghetti Squash might do the trick this time of Year! Veggie tips from Fitness Elements!



Ingredients

  • 1 spaghetti squash, halved lengthwise and seeded
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 cups chopped tomatoes
  • 3/4 cup crumbled feta cheese
  • 3 tablespoons sliced black olives
  • 2 tablespoons chopped fresh basil

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  2. Place spaghetti squash cut sides down on the prepared baking sheet, and bake 30 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven, and set aside to cool enough to be easily handled.
  3. Meanwhile, heat oil in a skillet over medium heat. Saute onion in oil until tender. Add garlic, and saute for 2 to 3 minutes. Stir in the tomatoes, and cook only until tomatoes are warm.
  4. Use a large spoon to scoop the stringy pulp from the squash, and place in a medium bowl. Toss with the sauteed vegetables, feta cheese, olives, and basil. Serve warm.
