The dish on fish and mercury: How healthy is your catch?



(CNN) -- Every week, Jackie Kaminer of Roswell, Georgia, buys fish for dinner at the local market. Although she knows it's full of nutrients -- including good-for-your-heart omega-3 fatty acids -- she's careful of the types of fish she brings home.

Her concern? Mercury and the dangers it poses to her children. So, she sticks to certain varieties: salmon, cod, tilapia and haddock are "safe fish," but she stays away from swordfish, sea bass and tuna.

As a mother of three, Kaminer should be concerned. Released into the atmosphere by industrial pollution, mercury contaminates water systems (and soil) when it rains. As fish feed on one another, the mercury stores up in their bodies.

The toxic metal affects the nervous system. And although studies have shown large amounts of mercury can also affect fertility and blood pressure, and possibly cause memory loss in adults, it's particularly dangerous to young children and fetuses.

According to the American Academy of Pediatrics, during the first several years of life, a child's brain is still developing and absorbing nutrients. Prenatal and infant mercury exposure can cause poor mental development, cerebral palsy, deafness and blindness. Even in low doses, mercury may affect a child's development, delaying walking and talking, shortening attention span and causing learning disabilities.

Having mercury levels that are too high isn't someone else's problem. In a recent study from the Centers for Disease Control and Prevention, one out of 17 women of childbearing age in the United States has mercury in her blood above the level that could pose a risk to a developing fetus (5.8 micrograms per liter). So the federal government advises pregnant women and those thinking of becoming pregnant to avoid certain fish, such as shark, swordfish and fresh tuna, usually found in fish markets and sushi. Canned tuna seems to be less of a threat, but the U.S. Department of Agriculture says consumption should be limited.

Why avoid these kinds of fish? According to Andrew Heyes, a scientist with the Smithsonian Environmental Research Center, Edgewater, Maryland, the older and larger the fish, the more mercury it has stored. "As it grows older, it can't eliminate mercury as fast as it takes it in," he says. "So there's an accumulation in the fish." Video Watch more on fish and mercury »

Because mercury is a growing threat to us and our environment, companies have started to take mercury out of thermometers, switches and even batteries to prevent it from entering our soil. Now, many regions, like the Chesapeake Bay states of Maryland, Virginia and Delaware, have instituted new rules to limit mercury emissions from coal-fired power plants, one of the largest sources of mercury pollution in the region.

Researcher Cindy Gilmour, also with the SERC, says that is a positive development because mercury contamination is getting out of hand. "We've opened Pandora's Box and we've let that mercury out from where it was buried underground, into the atmosphere and into our soils and waterways," she says. "All that excess mercury causes problems, not just in people."

In an effort to make sure these new regulations on mercury emissions are effective, scientists like Heyes and Gilmour are measuring levels of the toxic metal in watersheds near the bay.

Gilmour says the research is needed. "All those rules are starting to go into place, and we are starting to put those controls on our power plants. So what we want to find out here is whether those rules work and if the money we are investing in these technologies is really going to help," she says.

As they monitor mercury, scientists are also learning more about how it behaves in nature. Gilmour says mercury contaminates more than just the soil and water. "Mercury has a large impact on all kinds of animals -- loons, amphibians, songbirds, are all affected," she says.

It will be several years before researchers know if the regulations are making a difference. Until then, health experts say enjoy fish -- it's good for you -- but be like Jackie Kaminer and pick your fish wisely.

Natalie's Recipe Of The Week



Barbecued Lime Shrimp and Corn



With virtually no cleanup, cooking a meal in foil over the fire is simple. Buy premade foil oven bags, or fashion your own from heavy-duty aluminum foil. Then toss the bag directly on the coals. If you skip the couscous, soak up the juices with French bread.

Yield

4 servings (serving size: 5 ounces shrimp, 2 pieces corn, and 1 cup couscous)

Ingredients

  • 1/3 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • 2 teaspoons grated peeled fresh ginger
  • 2 tablespoons sugar
  • 1 teaspoon ground coriander seeds
  • 1/4 teaspoon black pepper
  • 2 ears corn, each cut crosswise into 4 pieces
  • 1 1/2 pounds large shrimp, peeled and deveined
  • 4 cups cooked couscous

Preparation

At home, combine the first 9 ingredients in a heavy-duty, zip-top plastic bag, and seal. Place the corn, shrimp, and couscous in separate heavy-duty zip-top plastic bags, and seal bags. Place the shrimp in cooler.

At campsite, place lime mixture, corn, and shrimp in foil oven bag. Place directly on hot coals (or in a 450° oven if at home); cook 10 minutes. Serve over couscous.

In Season: Asparagus

Now's the time to stalk up on these sensational spears.

What it looks like: Picture a slim green spear, often tinged with a bit of purple at the tip.

Selection tips: Look for firm, bright green stalks with tight, compact heads. Avoid spears that are dry, limp, or wrinkled, or have ruffled tips. Thinner spears are usually more tender, and you'll want to choose similarly sized ones so they'll cook evenly. One pound equals 16 to 20 spears, or about two cups chopped.

Storage tips: Try not to buy asparagus too long before you intend to cook it. When you get it home, don't wash it; instead, either stand the stalks upright in about an inch of water and cover them (and the container) with a plastic bag, or wrap the stem ends in a wet paper towel and seal the asparagus in a plastic bag. Either way, it will keep for only about three days.

Preparing: First, thoroughly wash the asparagus. You don't want to soak it; just hold the stalks upside down under cold water and shake them a bit to release any sand that might be caught in the tips. Then hold both ends of each spear and bend; the tough, fibrous base should snap right off. (This step is unnecessary in thinner spears, which are completely edible.) Then, pick one of three easy ways to prepare this delicate spring treat:

• Boil it. To boil asparagus, tie the stalks together with kitchen string, then stand them up in a cooking pot so the tips are just above the water line. If the stalks are too tall to allow you to use the regular lid to the pan, invert another pan on top instead. (Note: glass and ceramic coffeepots make ideal asparagus cookers.) Cook them only until they're crisp-tender, then remove them from the heat and drain them thoroughly.

• Nuke it. You can also cook asparagus in the microwave. Arrange the stalks spoke-fashion, tips toward the center, in about two tablespoons of water in a round baking dish. Cover and cook at HIGH for 7 to 10 minutes, or until crisp-tender. Be sure to rotate the dish half way through if you're not using a carousel.

• Eat it raw. Slice thin, fresh asparagus and add to a salad, or serve whole spears alongside your favorite dip.

Peak growing season: While hothouses provide asparagus year-round, the freshest is grown between February and June.

Health benefits: Eating this tender veggie is an excellent way to help protect yourself against heart disease, as it contains lots of folate, as well vitamins E, A, and C. In addition to helping your heart, folate (a B vitamin) helps cells regenerate; vitamin E fights Type II diabetes; and vitamins A and C help hold cancer and cataracts at bay. Asparagus also contains potassium, which helps lower blood pressure and perhaps even cholesterol.

Nutritional info: One-half cup of boiled asparagus (about six spears) equals approximately 22 calories, 1.4 grams of fiber, 2.3 grams of protein, 0.3 gram of fat (0.1 of it saturated), 10 milligrams of sodium, and no cholesterol.

Are the grocery stores ripping you off?

Think you know how to shrink your food bill? Think again.
Studies have shown that shopping leisurely in a grocery store leads to more spending.

Studies have shown that shopping leisurely in a grocery store leads to more spending. What does this mean have a plan! Awareness is KEY!

Many so-called "ways to save" are nothing more than grocery marketing strategies.

1. Stocking up on a "great deal"

While a purchase may be a "great deal" in terms of dollar amount, it's only a deal if the food actually gets eaten. This is especially true for perishables like milk, eggs, and produce. Don't overbuy, even when the price is right.

2. Reaching for the "value" size

The concept of getting a better price when you buy the larger package is generally accepted, but many companies have now wised up to our assumptions.

To be sure you're getting the best value for your money, check the unit price: it's the number on the shelf tag that says how much the item costs per ounce or pound. That way, it's a no-brainer to calculate whether the larger or smaller can of tomato sauce is the better buy.

There are some exceptions to the unit pricing guideline: poultry and meats. For instance, don't assume that buying a whole chicken is cheaper than buying parts separately. In this case you'll want to calculate the cost per serving rather than per unit. A whole chicken may be cheaper per pound, but that includes a lot of inedible material, like bone and skin.

3. Scooping up 10 for $10

"Wow," we think, "4 soda packs for $10? That's a steal!" It is, but does any one household really need 48 cans of soda or any soda for that matter at all? Not unless you're helping host a block party that week. But, unless is the ad specifies a minimum purchase, you can usually buy as little as you need while still taking advantage of the discount. Try 10 for 10 on cascade drinks only 2 calories and o sugars, o sodium , & o carbs. You can't beat that!

4. Skipping the store brand

Store brands often get a bad rap, but really, not all store brands stink. During a blind taste test, supermarket expert Phil Lempert showed that for things like cereal, potato chips, and ginger ale, a large percentage of shoppers either couldn't tell the difference between generic and name brand, or even preferred the generic type. So do your own taste-tests at home, and figure out which name brands you can swap out. Try Sun chips, Kettle chips, and diet ginger ale hopefully this helps.

5. Shopping leisurely

Supermarket folks have long known that the more time you spend in a store, the more you'll spend. In fact, studies show that for each additional minute you spend in a grocery store past half an hour, you will likely spend between 50 cents and $1. Write a list out and use my stick-to-it-ivness approach!

6. Taking advantage of one-stop shopping

As long as you're already at the store, might as well pick up laundry detergent and lightbulbs, right? Wrong. Supermarkets often price non-food household items 20 - 40 percent higher than discount stores, knowing that shoppers will buy them anyway out of convenience. So remember, grocery stores are for groceries only. Shop for toilet paper elsewhere. 7. Clipping coupons religiously

We're not saying coupons are bad. Coupons can save you money, but the operative word is can. They don't save money if you use them to pick up expensive items that you wouldn't buy normally. They don't save money if you're only getting a few cents off a $5 purchase. Studies show that if a shopper has a coupon in hand, they usually won't check to see if what they're buying is actually a bargain.

So use them, but use them wisely. Head to Web sites like CouponMom.com and MyGroceryDeals.com to learn how to organize and strategize your coupon use. Then find out if the store doubles manufacturer's coupons, accepts competitor's store coupons, or allows you to combine coupons for the same item.

8. Zoning in on "sale" signs

Just because it looks like a sale doesn't always mean it's on sale. For example, stores will create visual cues by using bargain bins, hanging promotional signs, or filling up endcaps (the displays at the end corners of each aisle) -- all using items that are actually full-price.

Or, they'll compare a sale price to a list price, except the list price has been hiked up to offer a deeper discount. So track prices of items you buy on a regular basis so you can evaluate a good deal when you see one, and read the small print, watching out for signage that uses faux-sale language like "everyday low price."

9. Making a list

Proponents of list-making says that it helps them remember what they need and avoid impulse purchases, but Robyn Moreno, the consumer editor at Women's Day, says that shoppers with lists spend over 41 percent more than those who shop list-free.

The idea is not to chuck the list completely, but to chuck the idea of the shopping list as wish list. Plan lists around menus, keeping the store circular handy so that you can take advantage of specials.

10. Watch the scanner for errors

Keep an eagle eye on the scanner and make sure you're getting charged the right prices. When items go on sale at the supermarket, the price change isn't always immediately updated on the store's computer listings, leading to overcharges at the cashier's.

Natalie's Recipe Of The Week


Chicken and Summer Vegetable Tostadas









The tostadas can easily become soft tacos if you skip broiling the tortillas. Serve with black beans.


Yield

4 servings
Ingredients

* 1 teaspoon ground cumin
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 2 teaspoons canola oil
* 12 ounces chicken breast tenders
* 1 cup chopped red onion (about 1)
* 1 cup fresh corn kernels (about 2 ears)
* 1 cup chopped zucchini (about 4 ounces)
* 1/2 cup green salsa
* 3 tablespoons chopped fresh cilantro, divided
* 4 (8-inch) fat-free flour tortillas
* Cooking spray
* 1 cup (4 ounces) shredded Monterey Jack cheese

Preparation

Preheat broiler.

Combine first 3 ingredients, stirring well. Heat oil in a large nonstick skillet over medium-high heat. Sprinkle the spice mixture evenly over chicken. Add chicken to pan; sauté for 3 minutes. Add onion, corn, and zucchini to pan; sauté for 2 minutes or until chicken is done. Stir in salsa and 2 tablespoons cilantro. Cook 2 minutes or until liquid almost evaporates, stirring frequently.

Working with 2 tortillas at a time, arrange tortillas in a single layer on a baking sheet; lightly coat tortillas with cooking spray. Broil 3 minutes or until lightly browned. Spoon about 3/4 cup chicken mixture in the center of each tortilla; sprinkle each serving with 1/4 cup cheese. Broil an additional 2 minutes or until cheese melts. Repeat procedure with remaining tortillas, chicken mixture, and cheese. Sprinkle each serving with about 3/4 teaspoon of remaining cilantro. Serve immediately.

Ingredients:

• 4 limes, sliced and seeded
• 1 bunch cilantro, chopped
• 1/2 red onion, chopped
• 4 cloves garlic, crushed
• 3 jalapenos, seeded
• 3 tablespoons flaxseed oil
• 1/4 cup water
• 2 tablespoons oyster sauce
• 1 tablespoon Mrs. Dash
• 8 or 9 white fish fillets

INSTRUCTIONS:


Blend all of the ingredients together, except the fish, for 30 seconds. Then pour the mixture over the fish fillets and let them marinate in the fridge overnight in a covered container. Remove the fish from the sauce and broil it in the oven for two minutes on each side. Serve immediately.

"We eat with our eyes, not out of our stomach," said Dr. Melina Jampolis, the diet and fitness expert for CNNhealth.com. "It's much more difficult to control serving sizes."

People have a tendency to keep eating until their plate is clean or the container of cookies is empty.

"A lot of people eat too much and their clothes feel tight. You shouldn't have to unbutton your pants, blouse or unzip anything after your meal," said Cheryl Forberg, the nutritionist for "The Biggest Loser." "You lose sight of your body's natural hunger cues."

To become more attuned to your body, avoid eating while standing up, sitting at the desk or inside a car, she said. Dedicate time for meals and snacks.

Rather than viewing meals as an obligatory part of the day, "learn to enjoy the process. At the same time, you begin to stop eating when you're comfortable, instead of when you have to unzip your jeans," Forberg said.

Avoid stocking problem foods like cookies or ice cream in the house if you know you can't resist them.

"When you know you have a weakness with chocolate or cookies, you probably shouldn't keep it in the house if you know you can't stop at one," she said.

One way to retrain the body is to divide snacks by portion sizes.

"Those 100-calories packs retrain people to the eye and decrease the snacking," Jampolis said. "It's more expensive and not environmentally friendly, but you're much better off getting a 100-calorie pack rather than eating out of container."

"If you're on a budget and you want to be more environmentally friendly, make your own. Every Sunday, measure 100 calories into seven Ziploc bags," she said. You can even recycle the bags.

Functional fitness may be among the latest buzzwords in gyms these days, but for good reason. It's about training your body to handle real-life situation

Yesterday you had a great workout at the gym. You're bench-pressing more weight than ever before, and pulling enough weight on the seated rowing machine to try out for the Olympic sculling team.

Today, you lift a 60-pound suitcase to carry it downstairs -- and throw your back out. What happened? In all likelihood, you're not paying enough attention to your functional fitness. You might be toned, tight, and ready for the beach, but are you ready to lift your toddler out of his car seat or hoist the spring-water bottle onto the dispenser?

Functional fitness and functional exercise are the latest gym buzzwords. They focus on building a body capable of doing real-life activities in real-life positions, not just lifting a certain amount of weight in an idealized posture created by a gym machine.

Making Muscles Work Together

"Conventional weight training isolates muscle groups, but it doesn't teach the muscle groups you're isolating to work with others," says Greg Roskopf, MS, a biomechanics consultant with a company called Muscle Activation Techniques who has worked with athletes from the Denver Broncos, the Denver Nuggets, and the Utah Jazz.

"The key to functional exercise is integration. It's about teaching all the muscles to work together rather than isolating them to work independently."

So what's an example of a functional exercise? Think of a bent-over row; not the kind of row you do on a seated machine, but the kind you do leaning over a bench, holding the weight in one hand with your arm hanging straight down, and then pulling the weight up as your elbow points to the ceiling, finishing with your upper arm parallel to the ground.

"That's an exercise that will build the muscles of the back, the shoulders, the arms, and because of its nature will really work your whole body," says exercise kinesiologist Paul Chek, MSS, founder of the Corrective High-performance Exercise Kinesiology Institute in California who has advised the Chicago Bulls and the U.S. Air Force Academy.

"Compare that motion to a carpenter bending over a piece of wood, a nurse bending over a bed to transfer a patient, or an auto mechanic bending over to adjust your carburetor. Anyone doing a bent-over row will find a carryover in things you do in normal life."

Contrast that with the seated row: You're sitting in a chair with your chest pressed against pads, and you pull two levers back. "You may be strengthening certain muscles, but your body's not learning anything, because you don't have to activate your core stabilizer muscles or the stabilizers of your arms and shoulders. The machine's doing it for you," says Chek.

"In functional fitness, most of the time, you should be standing on your own two feet and supporting your own weight when you lift anything."

Shrimp and Pesto Pizza
Makes 8 slices



With all its herbs, the pesto provides antioxidants—and a welcome break from plain-old-tomato sauce. The flax meal in the dough makes for a tasty, fiber-rich crust that boasts omega-3 fatty acids.

Shrimp and Pesto Pizza

Pizza

INGREDIENTS:
• Nonstick cooking spray
• 1 recipe whole-wheat and flax pizza dough (recipe follows)
• 1/4 cup reduced-fat pesto
• 6 oz large raw shrimp, peeled and deveined (approx 20 to 24 shrimp)
• 1/2 medium-sized red bell pepper, sliced

INSTRUCTIONS:
Preheat oven to 450 degrees Fahrenheit. Set baking rack in top third of oven. Lightly spray a baking sheet with nonstick cooking spray. Shape dough into a 12-inch round pan on prepared baking sheet. Spread pesto over dough. Top pizza with shrimp and pepper. Bake for 12 to 15 minutes. Cut into 8 slices and serve.

Whole-wheat and Flax-Meal Pizza Dough

INGREDIENTS:
• 2 1/4 cups whole-wheat flour
• 1/4 cup flax meal
• 1 tsp instant-rising yeast
• 1 tsp sugar
• 1 tsp salt
• 1 cup warm water (100 to 110 degrees Fahrenheit)
• 1 tbsp extra-virgin olive oil

INSTRUCTIONS:
In a large mixing bowl, combine flour, flax meal, yeast, sugar and salt. Stir in water and oil with a wooden spoon. When the dough starts to hold together, remove from bowl and knead by hand for 8 minutes (a standard mixer fitted with a dough hook makes this process much easier). Shape dough into a ball and return to bowl. Cover bowl with plastic wrap and let dough rise for one hour in a warm spot (70 to 80 degrees). Before baking, remove and knead dough for 5 or 6 strokes, then shape.

"Warning! The Dangers Of Dairy Revealed!

Countless scientists and charities as well as government agencies spend hundreds of hours a week analyzing cancer research, and now dairy products have come under the microscope. The latest research from the United States reveals that the hormones cows secrete into milk are suppressing genes that usually detect and kill cancer cells as they develop and increasing the receptors on cells that promote cancerous mutations.

The aim of this article is to bring the proven research to your attention and describe in better detail the mechanism of how dairy actually alters your own genetic cellular makeup, thereby allowing cancerous cells to develop. I will also discuss the reversibility of this epigenetic mutation by eliminating dairy consumption and increasing intake of certain other nutrients that protect these cells.

Hormones in Cow’s Milk

Grosvenor et al describes that a cow secretes hormones into its milk to allow the young underdeveloped calf to grow. The same hormone and substance content can be found in human breast milk. If you know your anatomy and physiology, a human infant or young calf has a poorly developed endocrine (hormonal) system. Thus, it would only be wise for nature to elect one parent to carry a mechanism to transport not only nutrients but hormones to their young. However, for us humans, most products we consume orally eventually enter our bloodstream via the stomach or the intestines. So if cows naturally secrete hormones into their milk, we are practically ingesting animal hormones straight into our bodies. Knowing this, it should be easy to understand that current dairy products are harmful. It is easy to draw parallels to the damage caused by injecting or orally administering the use of anabolic steroids. Essentially with dairy products, you are orally ingesting ANIMAL hormones into your bloodstream, hormones composed of mainly estrogen as well. Once in the blood stream (as these hormones survive digestion in the stomach), they then have access to the whole human body and combine at certain receptor sites, where they exhibit their effects.

To appreciate the real damage milk and related products such as cheese and those ever-more-popular whey protein shakes can do, let’s analyze the contents of cow’s milk. The following are some of the compounds found naturally in cow’s milk:

* Estrogens (Female Hormones)
* Androgens (Male Hormones)
* IGF-1 (Insulin like growth factor-1)
* Prolactins
* Leptins
* Epidermal and transforming growth factors

Of all these ingredients, it’s the IGF-1 that appears to be the main culprit for increasing the development of cancerous tumours. The full mechanism can be read in Dr. Bibb’s book, “Deadly Dairy Deception,” but essentially, IGF-1 exerts a powerful effect on the p53 gene at the receptor known as IGF-R1 (type 1 insulin growth factor receptor). At this receptor, a number of cellular responses occur, including proliferation and the protection of cells from programmed cell death (apoptosis). This results in the effect seen in Figure 1 below, where cells with a mutation inside divide uncontrollably as apoptosis of abnormal cells is suppressed.

The turning off of a gene is better known as hypermethylation or epigenetic mutation. This epigenetic mutation has been proven in the laboratory to be “heritable” and thus passed onto your children. This is due to the hypermethylated cells leaving “molecular footprints” that can be used as markers for constructing new cells of this nature, which means your children probably aren’t safe from your current dairy intake either. One study has shown that prenatal nutritional and metabolic events are memorized or “imprinted” by the developing organism that may result in the development of diseases in adult life.

In healthy cell division, the p53 gene should cause natural cell death in either aged or defective cells as illustrated in Figure 2 below.

It isn’t just the IGF-1 molecules that are dangerous in milk and similar products. It is also the estrogens that are consumed. The full mechanism of the estrogen in prostate cancer and hormone-sensitive breast cancer is also complex and can be further understood in Bibb’s aforementioned book. Essentially, these estrogens bind to cells via estrogen receptor alpha and over stimulate the development of cancerous cells. This enhances the effect of IGF-1, which suppresses the p53 gene and which would normally perform apoptosis and program these cells for elimination. In effect, what you have is one protein hormone (IGF-1) that suppresses your cell defence and another steroid hormone (estrogens) that simultaneously stimulates cancerous mutations. Together, you have a very dangerous cocktail. That’s how cells seen in Figure A develop so easily, especially as these compounds are hormones. Being a hormone, it exerts powerful effects on its receptor cell. Thus, estrogens and IGF-1 work very well together at producing the exact same effect but via different receptors, making them excellent accomplices in this cancer debacle. This means children and adults are consuming a dangerous concoction of hormones and protein hormones in staple foods such as macaroni and cheese, milkshakes, yoghurt, pizza, protein bars, protein shakes and cheese burgers. A full list of foods to avoid can be found below:

* All Milk: Skimmed, non fat, 2%, half & half, evaporated, etc
* All Cheeses: Cottage, vegetarian, organic, light, cream cheese, etc
* Milk Protein Concentrates: Whey protein, whey protein isolates, casein
* All Cream: Light and heavy whipped, sour cream, etc
* All Caseins: Hydrolysates, calcium caseinate, magnesium, caseinate, etc
* Milk Powders: Whole, non-fat milk
* All Ice Cream
* All Yoghurts

Hormones and the Cancer Link

Cancer is a group of cells that have been modified so that they do not die! According to Bibb, if a gene that causes a cell to die becomes defective or conversely, a gene that keeps a cell from dying becomes defective, then a cell can become “immortal” and pass this gift onto its daughter cells when it divides. This gift is then passed on down the generations of cell division, and soon you will have developed a group of cells that do not die. This is what is known as a cancer. This is how it is with prostrate cancer, for example. The p53 gene causes cells to die and has been found to be defective in prostrate and in many other cancers. In the lab, prostate and estrogen receptor positive breast cancer tissue behave similarly. Therefore, it is likely that what is said about one is true of another.

It is through this combined effect that a tumour develops as the cells divide and reproduce defectively, which is why all cancers get worse or grow over time. These cancer cells are going through natural cell division (mitosis) and passing on their cancerous information onto future daughter cells. The prostate gland, as with other glands, is stimulated by many types of hormones and proteins. These hormones and proteins produce their effect by attaching to the numerous receptors that have thus far been identified. It is these receptors that play an important role in determining the health of a gland and whether the individual will develop cancer from abnormal stimulation of these receptors.

Is Dairy Ever Safe?

If the dairy is treated like it was in the late 1920s when milk was first introduced, it would then be safe for consumption. A brief history lesson tells us that vitamin D is not a natural ingredient of milk. In the early 1900s, Ricketts was a disease of epidemic proportion due to a diet lacking in vitamin D. This discovery was made by one very clever biochemist, Dr Harry Steenbock at the University of Madison, Wisconsin. Dr. Steenbock exposed cow’s milk to ultra violet light and found that a compound called “ergosterol” would immediately convert to vitamin D upon exposure to certain wave lengths of UV light. Steenbock even won a patent for his work at curing Rickets by his process of UV exposure to milk in its manufacturing process. According to Bibb, Steenbock also inadvertently helped prevent people of his time from developing prostate and breast cancer in a way he can never appreciate. We now know his method also denatures the dangerous IGF-1 molecule and the estrogens by breaking down the disulphide bonds that keep IGF-1 active and that bind to estrogens in the milk. This process of ultra violet light exposure was used until the mid 1940s, where it became more economical to synthetically manufacture vitamin D and add it to the milk later.

An Increase of Prostate and Breast Cancer

Discussed earlier was the concept of epigenetic mutation, which is the “heritable” capacity of turning your genes off by leaving molecular footprints in your DNA. Thus, only now are we experiencing the unfortunate side effects of the evolution of the dairy foods process. This means the children from the 1940s are more prone to prostate and breast cancer as their gene protection systems are becoming weaker and weaker with time. This is due to each generation exposing themselves to IGF-1 and estrogens, except each parent weakens their p53 gene number, leaving their children with less unharmed p53 genes and so on, until now we really start to notice when we receive reports of teenagers with breast cancer and young men with prostate cancer. Until milk is treated again with UV light, we are going to continue to see young females looking like adult women and younger ages of people with prostate and breast cancer. The signs are all around us. Who else can explain why Western school girls are so more mature for their age compared to Asian, Japanese or other Eastern societies that do not consume large amounts of dairy? Scientists have noticed these trends by looking at dietary practices from 1986 to the present day, specifically noting the relationship between increased dairy consumption and increased risk of prostate cancer. This trend is even more evident in the black community.

The Role of Race in Prostate Cancer Incidence

The incidence of prostate cancer has been found to be significantly higher in black men than white men in certain regions of the world including the United States, the United Kingdom and in the African Caribbean (see Figure 3 below).

The reasons why black men are more prone to prostate cancer are researched and available, but the largest reason is the fact that they are born with higher levels of prostate specific antigen (PSA). This antigen is responsible for releasing more free IGF-1 into the body as it digests a binding protein called “IGF-1 binding protein-3.” To make matters worse, Tricoli et al and Winter et al concluded studies that found black men with age matched controls have lower levels of IGF-1 binding protein-3, which means they have a natural ability to free IGF-1 than white men, but they already have more IGF-1 circulating as well! Therefore, black men (and women) really do not need dairy products to increase their IGF-1 levels any further, as this can increase their incidence of cancer considerably. From the research data, a trend toward higher incidences of prostate cancer in colder climates versus warmer climates in black men was also noted. This can largely be attributed to the vitamin D effect discussed earlier, which naturally occurs in skin exposed to UV light. In the same study, the authors concluded that dietary supplementation of vitamin D could reduce the risk of prostate and several other types of cancers they researched (the daily dose would be a range of 1200-2000 iu per day).

Alternatives to Dairy

Now that you have a greater understanding of the dangers of dairy, it is time to discuss what alternatives can be used instead to lower your risk of prostate and breast cancer. Listed below are some alternatives to milk from a protein as well as calcium perspective:

Bee Pollen Granules

The biggest opposing factor I have seen when approaching people about this life saving issue is not that they don’t believe me or the research, it’s that they are extremely habitual dairy users. People like the taste of dairy in their diets and have a well established habit of dairy consumption. The best we can do to combat resistance is offer strong, healthy alternatives to dairy right off the bat. Educate your clients on the pasteurization process used on milk, which is an archaic method to prevent harmful bacteria entering our bodies. As pasteurization involves subjecting milk to high temperatures of heat treatment, this also kills good bacteria (as heat is a non selective procedure) and denatures much of the protein contained in the product. Also, as we age, we lose the enzyme lactate dehydrogenase, which allows us to process lactose. This is why many people have stomach bloating or uncomfortable reactions to dairy products or products containing dairy. These are just a few of the effective arguments you can present to your clients when educating them on the dangers of some dairy products and suggesting they find alternative sources of protein.

"5 Foods You Should Never Eat Revealed!"


"How To Avoid Dangers of Dairy!"

Countless scientists and charities as well as government agencies spend hundreds of hours a week analyzing cancer research, and now dairy products have come under the microscope. The latest research from the United States reveals that the hormones cows secrete into milk are suppressing genes that usually detect and kill cancer cells as they develop and increasing the receptors on cells that promote cancerous mutations.

The aim of this article is to bring the proven research to your attention and describe in better detail the mechanism of how dairy actually alters your own genetic cellular makeup, thereby allowing cancerous cells to develop. I will also discuss the reversibility of this epigenetic mutation by eliminating dairy consumption and increasing intake of certain other nutrients that protect these cells.

Hormones in Cow’s Milk

Grosvenor et al describes that a cow secretes hormones into its milk to allow the young underdeveloped calf to grow. The same hormone and substance content can be found in human breast milk. If you know your anatomy and physiology, a human infant or young calf has a poorly developed endocrine (hormonal) system. Thus, it would only be wise for nature to elect one parent to carry a mechanism to transport not only nutrients but hormones to their young. However, for us humans, most products we consume orally eventually enter our bloodstream via the stomach or the intestines. So if cows naturally secrete hormones into their milk, we are practically ingesting animal hormones straight into our bodies. Knowing this, it should be easy to understand that current dairy products are harmful. It is easy to draw parallels to the damage caused by injecting or orally administering the use of anabolic steroids. Essentially with dairy products, you are orally ingesting ANIMAL hormones into your bloodstream, hormones composed of mainly estrogen as well. Once in the blood stream (as these hormones survive digestion in the stomach), they then have access to the whole human body and combine at certain receptor sites, where they exhibit their effects.

To appreciate the real damage milk and related products such as cheese and those ever-more-popular whey protein shakes can do, let’s analyze the contents of cow’s milk. The following are some of the compounds found naturally in cow’s milk:

* Estrogens (Female Hormones)
* Androgens (Male Hormones)
* IGF-1 (Insulin like growth factor-1)
* Prolactins
* Leptins
* Epidermal and transforming growth factors

Of all these ingredients, it’s the IGF-1 that appears to be the main culprit for increasing the development of cancerous tumours. The full mechanism can be read in Dr. Bibb’s book, “Deadly Dairy Deception,” but essentially, IGF-1 exerts a powerful effect on the p53 gene at the receptor known as IGF-R1 (type 1 insulin growth factor receptor). At this receptor, a number of cellular responses occur, including proliferation and the protection of cells from programmed cell death (apoptosis). This results in the effect seen in Figure 1 below, where cells with a mutation inside divide uncontrollably as apoptosis of abnormal cells is suppressed.

The turning off of a gene is better known as hypermethylation or epigenetic mutation. This epigenetic mutation has been proven in the laboratory to be “heritable” and thus passed onto your children. This is due to the hypermethylated cells leaving “molecular footprints” that can be used as markers for constructing new cells of this nature, which means your children probably aren’t safe from your current dairy intake either. One study has shown that prenatal nutritional and metabolic events are memorized or “imprinted” by the developing organism that may result in the development of diseases in adult life.

In healthy cell division, the p53 gene should cause natural cell death in either aged or defective cells as illustrated in Figure 2 below.

It isn’t just the IGF-1 molecules that are dangerous in milk and similar products. It is also the estrogens that are consumed. The full mechanism of the estrogen in prostate cancer and hormone-sensitive breast cancer is also complex and can be further understood in Bibb’s aforementioned book. Essentially, these estrogens bind to cells via estrogen receptor alpha and over stimulate the development of cancerous cells. This enhances the effect of IGF-1, which suppresses the p53 gene and which would normally perform apoptosis and program these cells for elimination. In effect, what you have is one protein hormone (IGF-1) that suppresses your cell defence and another steroid hormone (estrogens) that simultaneously stimulates cancerous mutations. Together, you have a very dangerous cocktail. That’s how cells seen in Figure A develop so easily, especially as these compounds are hormones. Being a hormone, it exerts powerful effects on its receptor cell. Thus, estrogens and IGF-1 work very well together at producing the exact same effect but via different receptors, making them excellent accomplices in this cancer debacle. This means children and adults are consuming a dangerous concoction of hormones and protein hormones in staple foods such as macaroni and cheese, milkshakes, yoghurt, pizza, protein bars, protein shakes and cheese burgers. A full list of foods to avoid can be found below:

* All Milk: Skimmed, non fat, 2%, half & half, evaporated, etc
* All Cheeses: Cottage, vegetarian, organic, light, cream cheese, etc
* Milk Protein Concentrates: Whey protein, whey protein isolates, casein
* All Cream: Light and heavy whipped, sour cream, etc
* All Caseins: Hydrolysates, calcium caseinate, magnesium, caseinate, etc
* Milk Powders: Whole, non-fat milk
* All Ice Cream
* All Yoghurts

Hormones and the Cancer Link

Cancer is a group of cells that have been modified so that they do not die! According to Bibb, if a gene that causes a cell to die becomes defective or conversely, a gene that keeps a cell from dying becomes defective, then a cell can become “immortal” and pass this gift onto its daughter cells when it divides. This gift is then passed on down the generations of cell division, and soon you will have developed a group of cells that do not die. This is what is known as a cancer. This is how it is with prostrate cancer, for example. The p53 gene causes cells to die and has been found to be defective in prostrate and in many other cancers. In the lab, prostate and estrogen receptor positive breast cancer tissue behave similarly. Therefore, it is likely that what is said about one is true of another.

It is through this combined effect that a tumour develops as the cells divide and reproduce defectively, which is why all cancers get worse or grow over time. These cancer cells are going through natural cell division (mitosis) and passing on their cancerous information onto future daughter cells. The prostate gland, as with other glands, is stimulated by many types of hormones and proteins. These hormones and proteins produce their effect by attaching to the numerous receptors that have thus far been identified. It is these receptors that play an important role in determining the health of a gland and whether the individual will develop cancer from abnormal stimulation of these receptors.

Is Dairy Ever Safe?

If the dairy is treated like it was in the late 1920s when milk was first introduced, it would then be safe for consumption. A brief history lesson tells us that vitamin D is not a natural ingredient of milk. In the early 1900s, Ricketts was a disease of epidemic proportion due to a diet lacking in vitamin D. This discovery was made by one very clever biochemist, Dr Harry Steenbock at the University of Madison, Wisconsin. Dr. Steenbock exposed cow’s milk to ultra violet light and found that a compound called “ergosterol” would immediately convert to vitamin D upon exposure to certain wave lengths of UV light. Steenbock even won a patent for his work at curing Rickets by his process of UV exposure to milk in its manufacturing process. According to Bibb, Steenbock also inadvertently helped prevent people of his time from developing prostate and breast cancer in a way he can never appreciate. We now know his method also denatures the dangerous IGF-1 molecule and the estrogens by breaking down the disulphide bonds that keep IGF-1 active and that bind to estrogens in the milk. This process of ultra violet light exposure was used until the mid 1940s, where it became more economical to synthetically manufacture vitamin D and add it to the milk later.

An Increase of Prostate and Breast Cancer

Discussed earlier was the concept of epigenetic mutation, which is the “heritable” capacity of turning your genes off by leaving molecular footprints in your DNA. Thus, only now are we experiencing the unfortunate side effects of the evolution of the dairy foods process. This means the children from the 1940s are more prone to prostate and breast cancer as their gene protection systems are becoming weaker and weaker with time. This is due to each generation exposing themselves to IGF-1 and estrogens, except each parent weakens their p53 gene number, leaving their children with less unharmed p53 genes and so on, until now we really start to notice when we receive reports of teenagers with breast cancer and young men with prostate cancer. Until milk is treated again with UV light, we are going to continue to see young females looking like adult women and younger ages of people with prostate and breast cancer. The signs are all around us. Who else can explain why Western school girls are so more mature for their age compared to Asian, Japanese or other Eastern societies that do not consume large amounts of dairy? Scientists have noticed these trends by looking at dietary practices from 1986 to the present day, specifically noting the relationship between increased dairy consumption and increased risk of prostate cancer. This trend is even more evident in the black community.

The Role of Race in Prostate Cancer Incidence

The incidence of prostate cancer has been found to be significantly higher in black men than white men in certain regions of the world including the United States, the United Kingdom and in the African Caribbean (see Figure 3 below).

The reasons why black men are more prone to prostate cancer are researched and available, but the largest reason is the fact that they are born with higher levels of prostate specific antigen (PSA). This antigen is responsible for releasing more free IGF-1 into the body as it digests a binding protein called “IGF-1 binding protein-3.” To make matters worse, Tricoli et al and Winter et al concluded studies that found black men with age matched controls have lower levels of IGF-1 binding protein-3, which means they have a natural ability to free IGF-1 than white men, but they already have more IGF-1 circulating as well! Therefore, black men (and women) really do not need dairy products to increase their IGF-1 levels any further, as this can increase their incidence of cancer considerably. The table below details the massive change in prostate cancer incidence in black men in the US versus black men from Africa:

From the research data, a trend toward higher incidences of prostate cancer in colder climates versus warmer climates in black men was also noted. This can largely be attributed to the vitamin D effect discussed earlier, which naturally occurs in skin exposed to UV light. In the same study, the authors concluded that dietary supplementation of vitamin D could reduce the risk of prostate and several other types of cancers they researched (the daily dose would be a range of 1200-2000 iu per day).

Alternatives to Dairy

Now that you have a greater understanding of the dangers of dairy, it is time to discuss what alternatives can be used instead to lower your risk of prostate and breast cancer. Listed below are some alternatives to milk from a protein as well as calcium perspective:

Bee Pollen Granules
Nutritional Benefits: Bee pollen contains around 50 percent protein, much of which is in the form of free amino acids. It is also high in the B complex vitamins and enzymes.

Unflavored Gelatin
Nutritional Benefits: Gelatin (Gelatine) is made from the collagen protein found in bone, skin and cartilage. When beef or pork are boiled, the collagen is extracted and changes into gelatin. Our gelatin is an excellent source of protein containing over 85 percent protein. Typical usage is four teaspoons per day. Gelatin may be mixed in non carbonated juices or with foods.

Brown Rice/Rice Protein
Nutritional Benefits: Brown Rice/Rice Protein contains 80 percent protein. Rice Protein Concentrate is made from Non GMO Sprouted Brown Rice Grains. The amino acid profile is approximately 98 percent similar to mother's milk. The biggest opposing factor I have seen when approaching people about this life saving issue is not that they don’t believe me or the research, it’s that they are extremely habitual dairy users. People like the taste of dairy in their diets and have a well established habit of dairy consumption. The best we can do to combat resistance is offer strong, healthy alternatives to dairy right off the bat. Educate your clients on the pasteurization process used on milk, which is an archaic method to prevent harmful bacteria entering our bodies. As pasteurization involves subjecting milk to high temperatures of heat treatment, this also kills good bacteria (as heat is a non selective procedure) and denatures much of the protein contained in the product. Also, as we age, we lose the enzyme lactate dehydrogenase, which allows us to process lactose. This is why many people have stomach bloating or uncomfortable reactions to dairy products or products containing dairy. These are just a few of the effective arguments you can present to your clients when educating them on the dangers of some dairy products and suggesting they find alternative sources of protein.
